Mung beans are a fast-growing favorite for sprouting, prized for their crisp texture and clean, refreshing taste. Commonly used in Asian dishes like stir-fries and spring rolls, mung bean sprouts are a versatile addition to a variety of meals. These sprouts are high in plant-based protein, enzymes, and fiber, making them a valuable part of healthy, plant-forward diets.

To grow mung bean sprouts at home, soak 1/4 to 1/2 cup of seeds in a wide-mouth jar for 6 to 8 hours. Rinse and drain the seeds twice daily, keeping them in a dark location to prevent bitterness and promote pale, tender growth. Sprouts are typically ready to harvest in 2 to 3 days, while longer shoots can be grown in 6 to 7 days. Each 1/2 cup of dry seeds yields approximately 2.5 cups of fresh sprouts.

These organic seeds require no soil or sunlight and can be grown year-round indoors with minimal equipment. For best results, store unused seeds in a cool, dry location or refrigerate for extended viability. Once harvested, refrigerate sprouts and keep them lightly dry to preserve freshness.
